We are moving into the next lesson on how to do the GAPS Diet! I have already shared why we started the diet and the benefits we’ve seen here. Then I also shared a basic overview of how to do it here, how to make the basic broth here, and how to make the basic GAPS meal here.
As I’m sure you have gathered from the title, today we are going to learn how to make SAUERKRAUT! Yayyyy!
I can already feel that some of you are getting nervous…after all, making fermented food is definitely a novelty in today’s society and I believe it has a more intimidating connotation than it should. You will see today that it is truly as easy as falling off a log!
But before we get started, let’s take just a minute to figure out why you should even tackle this new skill at all.
Thus far we have been learning how to prepare one of the most healing liquids on the planet and then how to prepare food in it for optimum digestion. Sounds like we have our bases covered, right?
Well, let’s go back to square one. The biggest objective of this whole diet is to get your gut in a healthy state. If you want more information about the importance of a healthy gut, check out this post.
I have often heard the analogy that your gut wall is comparable to the dirt on the ground. A healthy gut with have a layer of something called “gut flora” lining the inside that could be compared to grass or sod on top of the dirt. Now, if you don’t have any grass and heavy rains come, what happens??
The dirt erodes away! Say bye-bye gut wall!!
Yes, if you do not have a good layer of gut flora you will begin to get holes and breaks in your gut wall…then half-digested food will begin to leak out into your blood stream…then your body will label those foods as toxic…then you will develop all sorts of food allergies to all the foods leaking out of your gut…then your body will be in a constant inflamed state…then illnesses and conditions and health issues of all sorts will run rampant throughout your entire system!
All because you don’t have GUT FLORA!!
So now you may be asking, “how do I get some of this treasured gut flora??”
The bone broth and basic meal that I shared with you in previous posts are food for the BODY. PROBIOTICS are food for the GUT and are the main way to increase your gut flora. And the main way to naturally get probiotics are through fermented foods, such as SAUERKRAUT!
